For us, coffee and cocoa are first and foremost popular foods. For Raphael Schilling, an expert in sustainable food procurement, they are also critical commodities. Their cultivation is linked to ecological and social challenges, such as high water consumption or non-living wages.

Until recently, the food engineer and NADEL 2010 graduate was Project Leader Food Sustainability at Coop Switzerland. Fritz Brugger talks to Raphael about the complexity of global value chains, the task of convincing consumers of sustainable products and whether the sustainable farms of the future will be controlled by robots.

Also: Why fair trade is not the same as organic, the effect of doing without plastic bags and how long it takes to compensate for a flight to Australia with a vegetarian diet.
